Baking in Asia is Mike Fleming's journey as a bakery educator. His coming to Singapore as the Principal/ Master Trainer of the Baking Industry Training Centre (BITC) in March 1993 was the beginning of a 30-year journey in Asia. Mike established Singapore's first Professional Bakery Training school, situated at the Prima flour mill on Kepple Road. The foundations laid in his five years as the Principal led the way for the development of the local industry by having better well, trained staff. Thirty years in, the bakery sector is flourishing, and a varied number of training providers are now active in the market.

Following the end of his tenure at BITC, he worked with a local Singapore Ingredient Technology company, CerealTech Pte Ltd, which provided the baking industry with commercial bread improvers, training, and technical support. Mike was to further expand his educational skills through individualised training programs delivered on-site to Culinary arts students in the region and specialised industrial bakery companies like Aryzata, which makes McDonald's hamburger buns in the Asia Pacific. In 2008, he established with Ceraltech a baking school, CerealTech School of Baking Technology, offering a Diploma in Baking Technology open to locals and people from within the immediate region.
